When I place an order, how long will it take to receive my order and how fresh will the coffee be?

ALL orders, regardless of shipping method chosen, typically takes 1-2 business days from the date of order for us to roast, package, and ship. We ship to the entire United States via the US Postal Service and UPS. Transit times typically take 1-5 days depending on how far away you are from Collinsville. Once your order is in the hands of the postal carrier, we do not have any control over how quickly the package is delivered.
See our shipping policy for more information.

Are your coffees certified Organic?

Short answer: Not always. While some of our coffees come from certified organic farms, we prioritize responsible stewardship of the land. Our farmers strive to minimize inputs and adopt sustainable agricultural practices to enhance overall sustainability. At times, we do source coffee from certified organic farms, and when we do, we clearly state this on the product page. However, due to our roastery not holding organic certification, we cannot label our packaging as organic. Rest assured, our roasting process is entirely natural—simply heating the beans and then packaging them, without introducing any non-organic elements.

Many small-scale farmers, especially in regions like Ethiopia, often grow their coffee using organic practices but lack the resources, funds or farm size to apply for and obtain official certification. Since we purchase traceable coffee, we have confidence in the product we provide. If you have any questions about a specific coffee’s origin or practices, feel free to reach out to us for more information.

You list flavor notes on your labels, do you add these flavors?

No, we don’t add any flavors. The flavors listed on our labels are naturally occurring in the coffee beans. Coffee is the seed of the coffee cherry, and like any fruit, it can exhibit a wide range of flavor notes. Similar to wine, different coffee varieties have distinct flavor profiles. The flavors are influenced by factors such as the coffee’s growing region, the processing method of the fruit, the drying process of the seeds, the sorting quality, the roasting technique, and even the brewing method.

What is the best way to store my coffee?

Once one of our bags of coffee is opened, it is good for about 30 days. Our 12oz and 32oz bags are designed to act as coffee containers. Once you open your new coffee for the first time, just zip the seal closed.  This will keep your coffee tasting good. Oxygen is what causes coffee to degrade, so keeping your bag sealed or in an air-tight container will help to extend its shelf life!

What is the roast level & profile?

We roast each of our coffees to bring out its best qualities, so all of our coffees are roasted a bit different from each other. Most all our coffees are a variation of a medium roast. Our Black Honey is our darkest roast.
